It is a popular ingredient in southeast Asian cuisine and can be used to make cakes, candies, cookies, ice cream, jams, and curries.

Strawberry Coconut Chia Popsicles are the perfect way to enjoy a sweet, refreshing snack without running to your typical fruit juice recipe. These Popsicles benefit from the light and creamy properties of the coconut milk to give your afternoon snack the tropical splash they deserve.

Strawberry Coconut Chia Popsicles

Yields: 8  - Prep time: 10 minutes

Ingredients: 15 oz coconut milk; 1/4 cup organic chia seeds; 4-5 tbsp honey; 1 tsp lemon juice ;10 large strawberries; 8 popsicle sticks

Directions: In a bowl, combine coconut milk, chia seeds, lemon juice and honey. Mix to combine. Cover and refrigerate for 2 hours. Soak popsicle sticks in hot water for 30 minutes. Take the popsicle mixture out of the fridge and add strawberries. Fill popsicle molds with mixture. Insert popsicle sticks. Freeze for 8 hours or overnight. You can keep them in the freezer for up to 2 weeks. To remove ice pops from the molds, run under hot water for 30 seconds and carefully pull them out.


It is commonly believed that the coconut was given its name by 16th-century Portuguese sailors because the three holes on the coconut looked like a human face. Coco means ‘laughing” or “grimace”.The English word Nut was added later on.

HOW TO STORE: Preserve the freshness!

To maximize the shelf life of canned coconut milk after opening, cover the can tightly with a plastic wrap or lid, or with aluminum foil. Coconut milk that has been continuously refrigerated will keep for about 4-6 days.
