COOKING TIPS: Start with the basics!
As for any other beans, Yupik's organic Apacchi beans need to be rinsed and soaked overnight before cooking. Once soaked, rinse again and boil them in 3 cups of water for every 1 cup of uncooked beans. Drain, add fresh water and cook until you can smash them with a fork.The soaked beans should cook in about 60 minutes. As seasoning after cooking, you can use either garlic cloves, cinnamon or ginger to add to the cooking water. Make sure to add salt right before serving, that will help avoid toughening. Once cooked, the beans can be kept stored in the refrigerator for several days. If you make big batches, simply divide them into 1 1/2 cup portions, let them cool completely, then refrigerate or freeze in covered airtight containers or heavy-duty freezer bags.
